If the missing gear was from one end of the cluster and not operating as a lock to keep other gears in place, and one were using friction shifters, it would only require adjustment of the relevant stop on the derailleur to be able to use such a cassette.
I'm probably just being dim but i don't understand this concern.
I am talking about a cassette (and likely STI indexed shifting)
my scheme was to just slide a 27t (if.i can find one) on in 1st position, then the 25-23-21 block.(shifted to positions 2,3,4 ) etc. And cinch it all together with a lock ring, as usual.

Is if this wont be too unstable and assuming my RD will reach my next challenge would be "where to find a loose 27t Shimano compatible cog?".
