Hi- you weren’t asking me, but I’d say:
- you can’t go wrong with Jagwire or Shimano for cables & housing
- tube manufacturer doesn’t matter, but tires I’ve had good results from Continental, Schwalbe, Specialized, Panaracer Pasela, WTB. If it’s all that’s available, Kenda may work out all right. (I’ve had decent ones and many other people have too, but they have their detractors.)
-re: wheels, well normally I’d say that sounds crazy unless they’re building them for you, but there are fewer options right now. What I’d do is (I’m assuming 700c 9-speed hubs?) but these, from Velomine, but they’re out of stock:
