Echoing what other people have said, you must work in a shop. If you're going to ride on the street, Open Pros are a really bad idea. While they're light, round rims, they have a very small profile not ideal for riding on *****ty streets. Get CXP33s if you want a bombproof rim. As far as hubs, I think the Pro Maxes are sealed, so for maximum length between hub overhauls, sealed is the way to go.
this has come up before, but "sealed" isn't the same thing as "cartridge bearing." some loose-ball (cup and cone) bearings are sealed very well by design, and some cartridge bearings suck at keeping out the mud.
