Also, what's the best way to find the right size? I'm just under 6 feet tall. I watched a video on YouTube about measuring the distance from my crotch to the floor, but it didn't really help me translate that measurement into a proper bike size. And the size details of the bikes listed on Craigslist often aren't very consistent.

I’m about your height. I find my 58 to to be a bit big and my 56 to be more spot on for sizing.
A gravel or cyclocross bike seems like it would suit you. However, you’re going to be hard pressed to find a halfway decent one under 500 in good working order.
There’s a couple entry level road bikes closer to 700-800 they have the clearance for wider tires and could convert rather easily into an all purpose ride though
