That’s a good point. You need to experiment and figure out what works for you at various temperatures and dress for the conditions. You may need fenders if it’s wet a lot and you may need knobby tires if your trails stay muddy.
Also be prepared to deal with flat tires. No wheel/tire combos where you can’t get the tire off easily. At 32 degrees, you need to be able to get the job done fast before your hands freeze!
