Personally, I'd run as high a pressure as they're rated for. With narrow tires, pinch flats are a problem at lower pressures. But I'm a heavy guy so its a bigger deal for me. You might be fine at the lower psi. When my sidewall says 85, I run 90. You'd be fine at 75 or 80. You'll get used to the road feel. Its not like the softer lower psi tires on a MTB. But its FAAAAaaast.
