No need to over complicate the wheels selection. To my knowledge most track/flip flop hubs are going to be 120mm on a bolt on axle. You'll get the same chainline regardless, and how you adjust chainline will be via BB selection or placement of the chainring relative to the crank spider. As I mentioned previously you'll need a 5mm spacer on each side of the axle. The thing to keep in mind is the Bianchi SJ is a cross frame which takes wide tires, and most track rims are going to be narrow profile. This is not ideal (fat tires on skinny rim) but hey it came stock with narrow rims and I was still able to run 42mm tires on those skinny rims without a problem. Oh and if you plan to run it single speed, you'll want rims with a machine braking surface.
