I've long thought about getting a Tandem for the same reason (would-be stoker not super enthused about cycling but likes to spend time together outdoors). The fact that I am not optimistic about how much she'd want to do it (meaning I don't want to invest a ton of money in it) and that we'd need a 25"/24" (or ~62 cm captain/~58 cm stoker) means I haven't done anything about that yet.
