I forgot to mention I'm very mechanically inclined. I ride a Piaggio BV scooter daily and just completed a complete overhaul of the transmission.
I'll keep the handlebar/saddle level in mind.
A gravel bike would be a good bike for NYC riding. You could put on some wide, 36-43mm street tires, it would make for a really comfortable ride and would not feel too slow. Cannondale Topstone 3 or the Co-Op ADV 2.2, both sold at REI on Lafayette St. They probably have a shop as well.
