It would probably work, SRAM doesn't have front and rear specific adapters, they have a 20mm IS adapter that's for front 180mm and rear 160mm

Yes, the pads do hang down past the rotor and encounter the rotor arm, the rotors are XT level, unsure of model number.
Does the following image shows how the pads are contacting the rotor?
If it does, it would be an indication that something isn't right with your setup
