I have gotten a pair of Hed Ardennes wheels and have them in a tube setup with Conti 5000 700x25. I'm new with the wide rims, my other bikes are all Mavic Open Pro.
I love the ride,but almost every time I go on gravel I get a pinch flat.
I had been running them at 70psi. The sticker on the rim says max 75psi at 25mm. I weigh about 177.
Based on what I know about pinch flats, they normally come from being under inflated. But I'm already close to the max on what the rim says I should inflate to.

I measured the tires with a caliper and it comes in at 27mm when mounted on these rims.
Question 2: Hed mentions on their site that the rims are optimized for 28mm tires. The sticker on the rim says max 70psi @ 28mm. Would I get fewer pinch flats just because the tire is bigger?
I contacted Velocity, whose Quill rim is about the same width as the Ardennes. They said go by the max psi listed on the tire and it will be fine. Of course that is a different rim made by a different company.
I haven't had any issues on pavement and love the ride quality. My other road bikes with the open pro rims get inflated to mid 90's in front and 100 in the rear and I never get pinch flats in those, no matter the surface.
Pretty much summing up what everyone has said: raise the pressure 5 psi and see if that stops the pinch flats. If that doesn't work or when you wear these tires out, get the widest tires that will fit in your frame and run them at lower pressures.
