(the "up to 50mm tires." statement appears in a Sales Pitch above the ACTUAL SPECIFICATIONS.)

I would ignore that. We ran 2.5” mt. bike tires on 19mm wide rims all the time way back, at 30psi. Never rolled a tire off a rim in hard single tracking turning.
