Conclusion: You have Exceeded the Tire's Safe Bead Angle and THAT is allowing the tire to slip out of the rim.
install a narrower tire or risk injury.. your choice.

I would ignore that. We ran 2.5” mt. bike tires on 19mm wide rims all the time way back, at 30psi. Never rolled a tire off a rim in hard single tracking turning.
