As I've not worked on coaster brakes I'd really like to know where and what to grease (or oil as some suggest) as there are some different thoughts. Advice on which type would also be great. Any help would be much appreciated.
I've attached the the schematic with number references.

I'd recommend re-posting in the Bicycle Mechanics section. You'll get good help there I bet.
In the mean time - here's my 2 cents, based on re-packing one coaster brake a long time ago, and re building my 2 speed kickback hub about a year ago:
- ball bearings get the grease. Personally I'm not picky, but I usually go with what my bike shop has for bike bearing grease. I'm not opposed to regular old car wheel bearing grease. It's probably resistant to getting washed away in rain.
- for pawls and those locking / ratcheting mechanisms, I got some 000 fluid gear grease. I can look up the brand if your curious.
