Rim vs. Disk is personal preference, and to some level you're just wrong about wide tires. The only drawback to wide tires is a slight aero penalty, and if you're willing to give that up on cables it's worth giving it up on tires, too.
Modern wider aero rims are often optimised around 28 mm tyres anyway. It's not even worth debating for road riding. I use 30 mm GP5000S TR and they are fast and reasonably comfortable over a wide range of road surfaces.
