I ended up checking the other used M900 cantilever caliper and it has the springs and the plastic covers. So really I am only short of one set of springs and covers for just one caliper.
Euro Asia Imports I believe is still open, I don't know how they are in business and have the parts they have but they are and they do. It is possible they have small parts for your brake or similar but they aren't listed on their website catalog however you could reach out to them:
