When I flipped my bro-in-law's threadless stem a week or so ago, not having a torque wrench suitable for bike torque ranges, I used a 10-inch long socket wrench with a suspended 8lb dumbbell to torque the bolts (5/6 * 8 yields about 6 ft lbs of torque).
