What does the mechanic at the bike shop say? He's the guy who's seen the bike.

As I remember, early '90s Bridgestone MTBs used 7-speed freewheels or Shimano freehubs. As for cage length, the guy who's actually seen the bike can probably make the best call. And Deore is nice, but Alivio works well, too. And don't forget the comparable Microshift models.
