1x10 has fewer useful gears than a 3x7, which means that if you are trying to maintain a particular cadence at a particular speed, you may have to settle for something less optimal because the steps between each of those 10 cogs is greater than on the 3x7.

Big jumps are fine for mountain biking. I'd hate to road bike like that.
