I like the aesthetic of a skinny tire. Especially on an old steel bike. Much of the warms and fuzzies that I get from a 40 plus year old bike is recreating the experience of the look and feel of riding back in the day.

I went from 32 mm to 25 on my Domane. I don't know if the better feeling of agility came from the narrower tire or that the GP 5000s were that much better than the Bontragers that came on it. But the skinny just doesn't look as good on that bike as it does my Raleigh.
