A traditional, internal-cam quick release will work just fine on a fixed gear bike, but you'll have to replace the solid hub axles with hollow ones.

Until UCI declared that quick releases could not be used for track events, you could get track hubs configured with either solid axles and nuts or quick releases, e.g.:
