Looking at the bike and comparing it even to other canyons in the same class (City) it looks like it has a lot of drop from the seat to the handle bar by design. I would make sure the wife likes this

looking at the setup video, there there seems to be no extra length to cut on steerer, so only adjustment would be seat post

it could be that they have the seat post set higher than needed to look fast for the pictures
