I think I'm going with the randonneuring bars. Short of grinding the chainring, I think it's time to start cabling and see how things work. I can always pull off the crank and modify it.
Old spring cables, or new color-matching cables?
A potential issue I see with the springs is that they are...just springs. They are open to dirt and dust getting inside and you can't really lube them. The lube seeps right out.
