There would be some interest, but not for a lot of money. If you are going to pay multiple thousands for a bike, then why not get something with more current tech? Maybe what we are led to believe is actually mostly true? I can’t say I’ve ever been disappointed with newer bikes. That’s not to say older bikes are bad, but things do move on and that inevitably impacts used pricing. But even bikes with all the latest tech depreciate pretty fast on the used market. My £4.5k 2022 Canyon is worth about £2.5k today on the used market or £1,800 on their trade-in scheme. All current gen tech.
