3) Solvang Century in Solvang, CA. Early March. Nice route, good support, but too many riders (over 5,000). A great early season or first century.

This year I am trying the Sierra Century in Plymouth, CA. Early June. I heard it's a very good ride as well.
Yep.The Sierra Century is excellent. I suggest the double metric. The course is beautiful, and the support is definitely among the best of any ride I've done. Great climbs (Slug Gulch gets pretty steep!), great descents (you get to do Fiddletown twice on the 200k, as well as Shake Ridge Road, which is pretty cool). It's my favorite single century ride bar none.
