Beautiful bike. I'd use those wheels as long as they're in good shape or a great deal came along in a 700c set. You would not want a narrow rim though if you were going to tour on it. Something about as wide as what came on it. You could lace up some 700c rims on your helicomatic hubs but I wouldn't due to the the problematic nature of them - questionable reliability and non standard parts and freewheel.
