We had a rash of Shimano rotors back a couple years ago that all came slightly out to way out. They were RT66 or similar generally the nicer IceTech rotors don't have that problem as much but a lot of new rotors here days need a little love.

I haven't used Galfer but haven't so far heard anything negative and I know they do a lot of motorcycle stuff. They look like good quality rotors and if their marketing on the laser cut and double blah blah blah is not just that could be quite a nice rotor.

My favored rotor especially on the E-side is Magura MDR-Ps but those are a thicker rotor not useful for Shimano (as their wear is 1.8 and that is where Shimano starts). Super stiff and provides excellent braking and if they did a Rohloff version I would be all over it.
