I think in your case it will come down more to which bike fits you the best. A custom road bike of similar weight and fit is unlikely to give you any speed advantage. The main potential advantage of a dedicated road bike would be aero and you are unlikely to get that advantage with a custom build anyway.

So unless you think a custom road build would give you a much better fit then I would just fit road tires on your gravel bike and call it good.

A more aero focused gravel bike with similar fit would be another option to consider.
