I agree with most of this, and appreciate that you are framing it in terms of what you need from the bike. I've got a couple bikes like that, too -- I didn't want something fancy and expensive for those bikes' intended purposes. However, I do think that even an off-the-shelf Seven (they do build those now) will ride better and be built better than a ti frame that costs half as much money. Whether either of us would be able to discern much difference in day-to-day use is debatable.
