In the case of Avid (eventually purchased by SRAM), one-finger braking referred to the index finger you would flip it after it failed to stop you.
Hmmm...I have never had this issue with Avid. I still have a bike set up with Avid Arch Rival v-brakes and Speed Dial levers. The brakes work pretty darn well....with one finger!
