Why complicate a simple procedure? Air them up to the recommended max pressure, and if anybody in the family complains the tires are too hard, let some air out.
The max pressure on the sidewall is aimed at the worst case fattest rider they could imagine ever using them and the highest safe pressure it can withstand. It is almost certainly a very poor starting point for most riders.

Personally I would start with the minimum pressure on the sidewall, especially if the respected calculators like Silca or SRAM are suggesting even lower pressures for rider weight and road type.

Some tire manufacturers do also provide more detailed pressure guides than just the min and max “safety” settings on the sidewalls. For example they often provide recommendations based on rider weight bands.
