Actually I forgot to mention that the longer your stem, the more "stable" your bike will feel. Correspondingly your bike will feel less agile.

Bar angle/hood placement: Usually people have the drops parallel to the ground like you have there. The trend nowadays is to have the brake hoods riding higher up than you do in that picture for comfort. I myself have them pretty much in the same place you do. Comes down to whatever feels more comfortable for you.

Bar tape wise: I'm a huge fan of the Deda bar tape. Huge. Waterproof, easy on the hands, soft but not mushy, great grip as well.

Also you probaly want to get the short stem versions of those tubes when you replace them, the valve caps are also unecessary.
