Probably pretty obvious that what makes a stoker crank, with square taper, is merely the pedal threading. If you were going to make your own with a drill press and taps, or order a set like such, you could start with nearly any solid cranks. Just go at least 25mm in from the existing holes.
Thanks for taking the time to find these! I have came across the crank shorteners that you have mentioned previously. I didn’t like the shorteners for the reason that you mentioned - my wife’s legs are already short as they are lol, and making the width of the cranks wider would result in an unhealthy Q angle for her knees.

The thorn ones may work pretty well. I was looking at the DaVinci cranks with the triple drilled holes 130/150/170mm, but the thorn ones are significantly cheaper.
