It sounds like you are a candidate for building up your own bike. Really what I would do is get something modern in a 2x12 maybe GRX so you can run smaller front chainrings and larger gears at the back without needing a 3x. You could probably find a nice road frame in whatever material you want and then build it up with the GRX 2x12 stuff and have a really excellent bike.

There is not much these days for triples as everything is 2x or 1x now and you have more gears at the back with wider range and more compact and subcompact cranks. There are companies that do still make them but they aren't really being stocked on much beyond maybe some touring bikes here and there and some low initial cost bicycles.
