Tourists and randonneurs usually settle for lower rpm. Especially on longer, multi-day rides. There is probably a physical reason for that. We also coast a lot. It's good to be able to pedal faster, especially uphill. It wouldn't be my primary focus though. I can pedal faster, but I don't. If you are doing workouts in erg mode, it's better to be spinning a bit faster so you don't bog down. Even though most of the better training software will keep you out of the spiral of death (resistance goes up as your cadence drops in order to maintain power), it might be unpleasant as your cadence starts to drop.
