Quite frankly, I prefer my bike's stock 35mm deep wheels that I have setup for gravel riding (Bontrager Pro 3Vs) as the 50mm are definitely affected by crosswinds. I occasionally ride no-handed, like when trying to open a energy bar package, and was almost wiped-out on more than one occasion as a crosswind took control of my 50mm road wheels. Granted, when I keep my hands on the handlebars, there isn't much of a problem.
