I do get how they're useful in terms of making waist size/material less important. It's just that the handful of bibs I've tried were all a little too tight over the shoulders (like, digging into them tight), which I found strange because it's not like I have an unusually long torso or anything. And until recently, brands like Pearl Izumi were making non-bib tights with really effective inner elastic waistbands and stretchy drawstrings.
At this point, I'd go with a pair of bib tights if I found some that fit well.
You looked at Le Col? Their straps are about right for me in an XL and I'm slightly taller than you but otherwise similar size. They all feel tight when you first put them on but once on the bike, things shift around. I'm an XXL in Castelli stuff.
