My own take on this is to buy tights without chamois, and wear them over bibs. I'm particular about the bibs I wear, and also about washing them after each use. So, I have 6 pair of bibs, but only 2 pair of tights - one light for temps in the 50s, one heavy for temps colder than that. This way i can wear the tights several times in a week and just wash them once. AND I'm assured of good fit where it counts, because I'm wearing quality bib shorts.
Both pair of tights are PI, size Large. I'm about your height but 20# heavier. I find the light tights are a great fit but the heavy ones are real damn snug - so much so that I have to pull the fabric up to the knees a bit or it's too tight there. Once that's done, though, they're fine.
I am not happy with the decline in PI stuff, but have to admit the Amphib semi insulted bib tights I have, have been surprisingly warm this past winter in road rides at 32-35 F. I purchased 2 pair last year, wore them all winter.
