Sounds like you're ready. I'll suggest making sure to eat plenty the day or two before the ride. Essentially carb loading. You want as much glycogen stored in your body as possible. Obviously don't overeat the night before and make yourself sick. But maybe think pasta and potatoes rather than steak the day before.
At this point, stick with whatever fueling you've been doing during the ride. Don't make any changes at the last minute.
I understand what you run into chewing a bar or similar and trying not to breathe in crumbs. I switched to just drinking my calories. I usually run something with about 250-300 cal per 750 ml bottle. Any bottles I carry have carbs in them. Of course, everyone is a bit different and what works best for one is necessarily best for someone else.
