Agree with Gugie. Haven’t done it in a long while but I found front panniers (clothes, food stuffs…easiest to ziplock them water resistant), rear rack (for sleeping bag, pad and tent if light enough), handlebar bag which is easy to get off in case of a down pour (for water sensitive items). Saddlebag for tools and extra parts, though triangle type frame bags can be good for those.
I think I was able to slide my tent on the front rack under the handlebar bag but may have had it in back.
I would almost certainly move to 700c if I could, but to a freehub for sure. A freewheel breaks and it is no fun. And the axles tend to be more robust it seems in freehubs.
But unless you are in the middle of nowhere, An Amazon purchase overnight can get you back on the road after a small delay if there is no bike shop.
A few spokes of each size, a solid hand pump, a few extra tubes and a tire…
SLR based cantilevers are probably preferable, but Koolstops for sure.
