Bikes: Soma Double Cross Disc (2017), Surly DT (2023), red Hardrock FS (circa 1996)

I am not local, but there is a curated network of greenways in Quebec called Route Verte in French.
Sherbrooke to Quebec City is a part or La Route Verte 1, the linked map will probably have names of the relevant trails.
