I don't think I've ever ridden a century that didn't have at least 6,000 feet of climbing, and usually much more. I doubt that anyone except for the most fit individuals can ride a 5-hour century with that kind of climbing.
Yeah, I hear you. I've ridden in Berkeley. It's very hilly and the Berkeley hills regularly have grades of 13 or 15%. The one century I did there was this. It had 7700' of climbing and it took me about 6;30 saddle time.
