Yeah, I hear you. I've ridden in Berkeley. It's very hilly and the Berkeley hills regularly have grades of 13 or 15%. The one century I did there was this. It had 7700' of climbing and it took me about 6;30 saddle time.
BTW, when it comes to hilly centuries, or hilly rides in general, making good time not only requires the strength to climb well, but also the skillz to descend well. I am not so great at the latter, and that will add time to my efforts on hilly rides.
