I know. I rode an 83 720 across the US with a 700c wheelset that i built up. It took some trial and error to find cantilevers that worked. I ended up using a set of models cantilevers that I still have stashed somewhere. There are cantis that can handle the adjustment but they'll likely need to be vintage ones because of the narrow posts. If you're going to this much work, it might be worth considering 650b wheels as well
Certainly possible. The 700s I have are Sun Ringle CR18. With tires, they are about 27-1/2” tall x 38mm wide. They really fit the vintage vibe. I bought them used already laced up with Shimano hubs.
So in a 650b, the rim would stand lower, and with tires mounted, it could wind up with being a hair wider and a hair less tall than what I have now. Not sure where to start. Could be opening a whole new can of worms.
