A key factor is flat or drop bars. I prefer flat for commuting, for better vision and brake position optimized for the upright position. But if OP wants a bike more optimized for longer rides, and doesn't mind the drop bar when commuting, drop may be the choice. Nobody can make that choice but the OP. Test rides may be needed.

Tire width is another key. There's a lot of personal preference, so OP has to decide what kind of tires they want to run. I know people who won't consider anything under 45mm on any surface, and others consider 30mm to be ridiculously wide. Max tire width drives frame options. Pick a number and go.

Then there's all the fiddly argumentative things like disc vs rim, 1x vs 2x, tubes or not, even belt or chain. Make your choices and go. Test rides may be necessary.

If you want fender mounts, that excludes a lot of bikes, which is frankly quite helpful.

You can pick any combination of the above and have a bike that will work; best depends on your preferences and use case. Like, I live in the PNW so fenders are a must. When I lived in Texas, nope.
