To my mind, calling eggs, butter, and cheese "healthy fats" is a bit of a stretch. When researchers want to clogs the arteries of rats, they feed them egg yolks.
I don't think my GI tract would take kindly to that much food at one sitting, especially after a long ride. My recovery food is often just PB&J and some chocolate milk.
