You should not feel a difference with new bearings. However...

Typical wheel hub, external bottom bracket bearings, etc, the races (cups and cones) will have very fine precision grinding marks, fine "lines". As the bearing "burnishes in", those fine lines will be replaced by mirror smooth surface where the bearing balls directly bear. After a few months, my BB bearings, assembled with hollow spindle end preload cap torqued to spec, I could feel the tiniest bit of slack, due to that wearing in. I loosened the crank arm, retorqued to spec, and I haven't had to retorque since, 3 years and a lot of miles now. That's one thing I like about the external bearing setup, can restore bearing preload, which is critical for durability. Internal BB cartridges, I cannot do that, when they start to loosen up.
