Your dad's dad did. What do you think "gravel" bike s are? They started out as common road bikes and riders did changes that seemed to suit their riding better. Don't get too caught up in terms.

A big aspect of classic road bikes is their, often, lack of tire clearances to allow wide/knobby tires to fit. In this respect the common road bikes of the 1970s make for better conversions as they typically could fit a wider than 25mm tire with ample mud clearance still.
