Some races are on Peacock, like the TDF. You could buy it for a month (if it's available in your area). I think the UCI site might have options. And you can google "how to watch" which sometimes gives you options.

Bicycle racing is a very small sport in the US, a lot of stuff available in Europe doesn't cross the pond. Don't know about Mexico.
I miss the "good old days'" of GCN+. It was reasonably priced and had really good coverage.
