Kucharik used to sell bibs with a "privacy flap" which made nature breaks much easier (at least for guys.) Just pull your bike off the road, lean against it with your back to the road, pull out an old tire tube and pretend you're looking for a leak while taking a leak.
I wish I had bought a few extra pairs before he closed shop. He made really good stuff.
