A lot of the retro-guys (myself included) prefer chromed steel fenders for strength and aesthetics. They're more durable and they're not much heavier than plastic fenders, especially with a loaded bike. There's a reason why so many of the old Raleigh 3-speeds and Schwinn cruisers still have their steel fenders intact - they last. Plus you have more options for attaching lights or small racks directly to the fender, giving yourself more arrangements like a French constructeur touring bike. For everyday commuters I don't think they are appreciably better than the nice plastics (SKS), but on a high-end bike like a Herse, Singer, or Rivendell custom nothing else would really do.

Edit: To the OP - get the SKS and you'll be happy.
